HYDERABADI MUTTON BIRYANI RECIPE/HOW TO MAKE HYDERABADI MUTTON DUM BIRYANI preparation with step by step photos and quick video.This is the authentic style of Hyderabadi mutton biryani. This biryani is prepared using fragrant rice, aromatic spices and Marinate Mutton. Hyderabadi mutton biryani preparation can vary from place to place but this method is easiest one. In this method ,I have used the cooked mutton after marinating for an hour. If you use the quality basmati rice , it will definitely improve the taste . PREPARING MUTTON - STAGE 1
Ingredients
- For Marination:-
- Mutton - 1/2 kg
- Ginger,Garlic,Green Chili paste -3 tsp
- Turmeric Powder- ½ tsp
- Red Chili Powder - 2 tbsp
- Whole garam masala -(Green Cardamoms,Black Cardamoms,Black Pepper,Cloves,Cinnamon Sticks,mace,Star anise)
- Finely Chopped Coriander- 1 hand full
- Finely Chopped Mint Leaves - 1 hand full
- Salt -to taste
- Lemon Juice- ½tsp
- curd yogurt/-1 cup
- Fried Onion- 1 cup
- Oil - 2 tbsp
Directions
- Step 1 Take ginger, garlic, green chilies and water in a grinder and make a paste. Keep aside some fried onions for garnish
- Step 2 Take mutton pieces
- Step 3 Add ginger-garlic-green chilies paste
- Step 4 Add turmeric powder ,red chilli powder
- Step 5 Take Green Cardamoms, Black Cardamoms, Black Pepper, Cloves, Cinnamon Sticks ,Mace,Star anise Whole Garam Masala.
- Step 6 Add coriander leaves ,mint leaves
- Step 7 Add salt and Lemon juice
- Step 8 Add curd/yogurt
- Step 9 Add oil
- Step 10 Add fried onion
- Step 11 Mix all these ingredients nicely with your hand and marinate for 45 minutes.
- Step 12 Cook the meat:-
- Step 13 Add some water and cook the marinated mutton in a pressure cooker for 5 whistles .
COOK FOR RICE - STAGE 2
Ingredients
- For Rice:-
- Water- 2 liters
- Long Grain Rice/Basmati Rice -½ kg (Soaked in water for 30 minutes)
- Black pepper
- Cinnamon Sticks
- Green Cardamom
- Cloves
- Cumin seeds -1/2 tsp
- Salt- to taste
- Coriander-few
- Mint Leaves -few
- Oil - 1 tsp
Directions
- Step 1 Take water in a vessel and add cinnamon sticks, black pepper,green cardamoms, cloves ,cumin seeds and salt.
- Step 2 Add Mint Leaves,Coriander Leaves
- Step 3 Add oil
- Step 4 Boil the water and add the soaked rice to it.
- Step 5 Cook this rice till it’s ¾ . Drain excess water
HYDERABADI MUTTON BIRYANI RECIPE/HOW TO MAKE HYDERABADI MUTTON DUM BIRYANI
Ingredients
- For making Biryani:-
- Ghee
- Saffron in warm milk
- Chapati Dough
- For Garnish:-
- Fried Onions
- Mint Leaves
- Coriander Leaves
Directions
- Step 1 Take heavy-bottom pan and grease it with ghee
- Step 2 Add first layer of cooked rice
- Step 3 Then add the cooked mutton gravy.
- Step 4 Add second layer of cooked rice .
- Step 5 Add melted ghee
- Step 6 Pour the saffron and milk mixture on top of the rice.
- Step 7 garnish with mint leaves, coriander leaves and fried onions.
- Step 8 Now stick the chapati dough to the edges of the pan and create a seal.
- Step 9 Keep the lid on the pan and let the biryani cook for 25-30 minutes.
- Step 10 Remove the lid carefully and your delicious Biryani is ready to be served

MAKING OF HYDERABADI MUTTON BIRYANI:
- Take mutton pieces

4. Take Green Cardamoms, Black Cardamoms, Black Pepper, Cloves, Cinammon Sticks ,Mace,Star anise Whole Garam Masala.
6. Add coriander leaves ,mint leaves
7. Add salt and Lemon juice
8. Add curd/yogurt
10. Add oil
11. Mix all these ingredients nicely with your hand and marinate for 45minutes.
