Besan barfi is a popular Indian sweet that is made with gram flour, ghee, and flavored with cardamom. This homemade recipe melt-in-mouth every time you bite burfi. It’s gluten-free. You need to roast the besan properly. If your besan is not roasted properly, the burfi will have the raw taste. Please note if the syrup is over-cooked, the burfi will be hard and turn out like a rock. If you have to take care of these two things, you will get the perfect besan barfi.

Besan Ki Barfi | Besan burfi recipe | How to make besan barfi preparation with step by step photos and a quick video.
Ingredients
- Gram flour(besan)- 1 cup
- Ghee -½ cup
- Sugar -½ cup
- Water -¼ cup
- cardamom powder-½ tsp
- Dry nuts -2 tbsp
Directions
- Step 1 Preparing sugar syrup:
- Step 2 Take a pan and add sugar
- Step 3 add water and mix it well until sugar dissolve
- Step 4 Boil for 6 minutes
- Step 5 One string consistency in the sugar syrup.Keep it aside. Do not overcook the sugar syrup.
- Step 6 Take a pan and add ghee
- Step 7 Add besan and stir it continuously on low flame
- Step 8 Besan will clump up at first.keep stirring
- Step 9 After around 15 minutes, the besan will start to release ghee and loosen up.
- Step 10 After 25 minutes, it will become like a smooth paste.
- Step 11 Add cardamom powder
- Step 12 Add sugar syrup
- Step 13 Stir until all the sugar syrup is well combined with the besan.
- Step 14 Transfer the mixture to a pan lined with parchment paper.
- Step 15 Sprinkle chopped nuts on top and press slightly.
- Step 16 Let the burfi set for 30 minutes
- Step 17 Cut into pieces. I trim the edges and then cut them into squares.
- Step 18 Store besan burfi at room temperature for 10 days!

3. Boil for 6 minutes
4. One string consistency in the sugar syrup. Keep it aside. Do not overcook the sugar syrup.
5. Take a pan and add ghee
6. Add besan and stir it continuously on low flame
7. Besan will clump up at first.keep stirring
8. After around 15 minutes, the besan will start to release ghee and loosen up.
