Though this culture had started due to the commercial hotel’s revolution where they serve 3 chutney and sambar for 2 idlis but people really liked the change. How can we make multiple chutneys quickly at home in the hotel-style? So I had picked 3 chutney which almost shares the same ingredients. Each chutney brings its own flavor and unique tastes. Ingredients
- Coconut chutney:
- Coconut -1 cup,grated
- Roasted gram dal(Potukadalai) -2 tbsp
- Green Chillies-2
- Water -as required
- Salt - to taste
- Onion Chutney:
- Onion - 2, chopped
- Coconut - 2 tbsp
- Red chilli - 4
- Tamarind - 1 tsp
- Jaggery - 1 tbsp
- Salt - to taste
- Coriander Chutney:
- Coriander leaves - 1 cup
- Urad dal - 2 tbsp
- Coconut - 2 tbsp
- Green Chili-1
- Tamarind - 1 tsp
- For Tempering:
- Oil - 2 tbsp
- Mustard seeds - ½ tsp
- Red chili - 1
- Split urad dal- 1 tsp
- Curry leaves -few
Directions
- Step 1 Coconut chutney :
- Step 2 Take a mixer jar and add coconut
- Step 3 Add gram dal(Potukadalai)
- Step 4 Add green chilli
- Step 5 Add ginger
- Step 6 Add salt
- Step 7 Add water
- Step 8 Blend to coarse paste.you could add the water if required.Keep it aside
- Step 9 Onion chutney
- Step 10 Take a mixer jar and add chopped onion
- Step 11 Add red chili
- Step 12 Add coconut
- Step 13 Add jaggery
- Step 14 Add tamarind
- Step 15 Add salt
- Step 16 Add water
- Step 17 Blend to smooth paste.you could add the water if required. Keep it aside
- Step 18 Coriander chutney
- Step 19 Take a pan and add urad dal and roast for few minutes in low flame
- Step 20 Turns golden brown and transfer to the mixer jar
- Step 21 Add oil
- Step 22 Add green chili and saute it well
- Step 23 Add coriander leaves and saute it for a minute
- Step 24 add tamarind and saute it well
- Step 25 Transfer to the mixer jar and add coconut
- Step 26 Add salt
- Step 27 Blend to smooth paste.you could add the water if required. Keep it aside
- Step 28 Prepare the tempering
- Step 29 Take a pan and add oil
- Step 30 Add urad dal
- Step 31 Add mustard seeds and let it splutter
- Step 32 Add red chili
- Step 33 Add curry leaves and saute it well
- Step 34 Pour the tempering over chutneys and serve with idli, dosa

Coconut chutney :
1. Take a mixer jar and add coconut
2. Add gram dal(Potukadalai)
3. Add green chili
4. Add ginger
5. Add salt
6. Add water
7. Blend to coarse paste.you could add the water if required. Keep it aside
Onion chutney:
1. Take a mixer jar and add chopped onion
2. Add red chili
3. Add coconut
4. Add tamarind
5. Add jaggery
6. Add salt
7. Add water
8. Blend to smooth paste.you could add the water if required. Keep it aside
Coriander chutney:
1. Take a pan and add urad dal and roast for a few minutes in low flame
2. Turns golden brown and transfer to the mixer jar
3. Add oil
4. Add green chili and saute it well
5. Add coriander leaves and saute it for a minute
6. Add tamarind and saute it well
7. Transfer to the mixer jar and add coconut
8. Add salt
9. Blend to smooth paste.you could add the water if required. Keep it aside
Prepare the tempering:
1. Take a pan and add oil
2. Add urad dal
3. Add mustard seeds and let it splutter
4. Add red chili
5. Add curry leaves and saute it well
6. Pour the tempering over chutneys and serve with idli, dosa
