Mangalore bonda | Goli baje recipe | Udupi recipe preparation with step by step photos and a quick video.
Ingredients
- Maida / plain flour -1 cup(100gm)
- Curd- ½ cup(80gm)
- Baking soda -¼ tsp
- Hing /asafoetida -¼ tsp
- Salt to taste
- Curry leaves -few, finely chopped
- Green chili -1,finely chopped
- Ginger -½ inch, finely chopped
- Pepper -½ tsp
- Cumin / jeera -½tsp
- Oil, for frying
Directions
- Step 1 Take a mixing bowl and add maida
- Step 2 Add curd (you can alternatively use buttermilk.)
- Step 3 Add chopped curry leaves
- Step 4 Add finely chopped green chili
- Step 5 Add finely chopped ginger
- Step 6 Add jeera
- Step 7 Add pepper
- Step 8 Add baking soda
- Step 9 Add salt to taste and mix it well until everything is well combined.
- Step 10 Beat the batter making sure to incorporate air well.
- Step 11 Rest for one hour for best results.
- Step 12 Now dip your hand in cold water and pinch a small ball sized batter.
- Step 13 Drop it in hot oil keeping the flame on medium.
- Step 14 Stir and fry uniformly on medium flame.
- Step 15 Drain off the goli baje once it turns golden brown and crisp.
- Step 16 Finally, goli baje is ready to enjoy with coconut chutney.
