Semiya payasam | semiya kheer is a traditional and famous dessert in India. Semiya payasam | semiya kheer can be made with different ingredients, like lentils, grains, and even vermicelli noodles. Typical Payasam|Gheer is made with white sugar by directly adding it. Here, we caramelize sugar and add it in semiya payasam | semiya kheer. However, you can also use jaggery as an alternative to sugar. it would make it more healthy and tasty. The caramel flavor enhances the flavor of the dish and the caramelized nuts do add a beautiful crunch to the payasam. It can be ideally served as after meal dessert or can also be made for any celebrations and festivals.

Caramel semiya payasam | Caramel kheer recipe | Caramel vermicelli payasam preparation with step by step photos and a quick video.
Ingredients
- Ghee -2 tbsp
- Vermicelli/semiya -½ cup
- Milk -4 cup
- Sugar-3/4 cup
- Cardamom powder-½ tsp
- Raisins - 2 tbsp
- Cashew 2 tbsp
Directions
- Step 1 Take a large Kadai and add ghee
- Step 2 Add vermicelli and roast on low flame until it turns golden brown.
- Step 3 Add milk and give a good stir.
- Step 4 Boil for 7 minutes or until the semiya is cooked completely.
- Step 5 Now prepared caramelized sugar, take a pan and add ghee
- Step 6 Add sugar and keep stirring and cook on low flame until the sugar melts.
- Step 7 Continue to cook until the sugar syrup turns golden brown.
- Step 8 Pour the caramelized sugar over the kheer and mix it well until everything is well combined.
- Step 9 Simmer for 2 minutes. keep it aside.
- Step 10 Add cardamom powder and mix it well.
- Step 11 Take a pan and add ghee
- Step 12 Add cashew and roast it for few minutes or until the cashew turns golden brown.
- Step 13 Add raisins and saute it well
- Step 14 Pour the dry fruit over the kheer and mix it well.
- Step 15 Enjoy caramel semiya kheer hot or chilled.
