Ulli vada/Onion vada is one such recipe. It’s very famous in Kerala and is mostly available in the evening at tea shops. Keralites would like to have tea with hot and crispy Ulli vada/Onion vada. These crunchy onion fritters could be made in no time and it requires very fewer ingredients. Ingredients are easily available. Onion Vada |Ulli Vada |Onion Bonda Recipe preparation with step-by-step photos and a quick video.
Ingredients
- Onions finely sliced - 4
- Green chillies chopped - 2
- Ginger chopped - 1 tbsp
- Curry leaves chopped - few
- Salt to taste
- Turmeric powder - ¼ tsp
- Chilly powder -1tbsp
- Fennel seeds - 1 tsp
- Garam masala powder - ½ tsp
- Rice flour -2 tbsp
- Maida - 3 tbsp
- Sugar - ½ tsp
- Oil for frying
Directions
- Step 1 Take a mixing bowl and add chopped onion
- Step 2 Add chopped green chili
- Step 3 Add curry leaves
- Step 4 Add chopped ginger
- Step 5 Add salt to taste
- Step 6 Add turmeric powder
- Step 7 Add red chili powder
- Step 8 Add garam masala powder
- Step 9 Add fennel seeds.Squeeze and mix it well
- Step 10 Keep it for 10 minutes.
- Step 11 Add sugar
- Step 12 Add rice flour
- Step 13 Add maida and mix it well. Making sure everything is well combined.
- Step 14 Take a ball-sized mixture and make a round shape.
- Step 15 Heat the oil and deep fry the Vada for 7-10 minutes in medium heat
- Step 16 Remove from the oil and rest for 10 minutes. (Half done)
- Step 17 Again deep fry the onion Vada until crispy and golden color. Serve hot

3. Add curry leaves
4. Add chopped ginger
5. Add salt to taste
6. Add turmeric powder
7. Add red chili powder
8. Add garam masala powder
9. Add fennel seeds. Squeeze and mix it well
10. Keep it for 10 minutes.
11. Add sugar
12. Add rice flour
13. Add maida and mix it well. Making sure everything is well combined.
14. Take a ball-sized mixture and make a round shape.
15. Heat the oil and deep fry the Vada for 7-10 minutes in medium heat
16. Remove from the oil and rest for 10 minutes. (Half done)
17. Again deep fry the onion Vada until crispy and golden color. Serve hot
