This famous Indian snack is stuffed with spiced potato & peas filling. To get the right texture and flakiness, the dough has to be kneaded correctly. To make the crispy samosa, you must fry in low flame. Use heavy bottom and deeper pan for frying. A samosa crust dough has to be kneaded to a tight and firm dough. So add water in parts while kneading the dough.

Ingredients
- For Dough:
- Maida (plain flour) -2 cup
- Ajwain (carom seeds) - ½ tsp
- Salt - to taste
- Oil -¼ cup
- Water -½ cup
- For Stuffing:
- Oil -2 tbsp
- Cumin (jeera)-1 tsp
- Coriander seeds- ½ tsp crushed
- Fennel (saunf) -½ tsp
- Ginger-1 inch,finely chopped
- Chilli-1,finely chopped
- Peas (matar) -½ cup
- Kashmiri red chilli powder-½ tsp
- Coriander powder-½ tsp
- Cumin powder (jeera powder)-¼ tsp
- Aamchur (dry mango powder)-½ tsp
- Chaat masala -½ tsp
- Garam masala -½ tsp
- Salt - to taste
- Potato -3,boiled & mashed
- Coriander-3 tbsp, finely chopped
- Water- for sealing
- Oil- for deep frying
Directions
- Step 1 Take a bowl and add maida
- Step 2 Add salt
- Step 3 Add ajwain
- Step 4 Add oil and crumble the dough.
- Step 5 Knead to the dough and rest for 20 minutes.
- Step 6 Take a Kadai and oil
- Step 7 Add jeera
- Step 8 Add fennel (saunf)
- Step 9 Add crushed coriander seeds and saute it well
- Step 10 Add chopped ginger
- Step 11 Add green chili and saute it well
- Step 12 Add green peas and saute it well
- Step 13 Add red chili powder
- Step 14 Add coriander powder
- Step 15 Add garam masala powder
- Step 16 Add amchur powder
- Step 17 Add chaat masala powder and mix it well
- Step 18 Add boiled and mashed potato and mix it well
- Step 19 Add coriander leaves
- Step 20 Add lemon juice and mix it well. Keep it aside
- Step 21 Take a ball sized dough and grease with oil.
- Step 22 Roll the dough into an oval shape. Don’t roll the dough too thin or too thick.
- Step 23 Cut it horizontally, diving into 2 equal portions using a knife.
- Step 24 Grease with water and make a cone.
- Step 25 Stuff 2 tsp of prepared samosa masala into the cone.
- Step 26 Grease little water on the edges.
- Step 27 Close and seal tightly by pressing firmly.
- Step 28 Deep-fry the samosa on a low flame.
- Step 29 Stir occasionally, frying the samosa on low flame for at least 10 minutes.
- Step 30 Once the aloo samosa turns golden and crisp, drain off over kitchen paper.
- Step 31 Enjoy samosa with green chutney and tamarind chutney.
