The hard-boiled half eggs coated in a flavourful spicy masala wrapped up in golden crispy and flaky puff pastry are a treat to our taste buds. We bought the oven 4 years back. Since then my son keeps asking me to make egg puff at home. Every time, I manage him by getting it from the bakery. I felt making pastry is the biggest challenge at home. But in recent times, I found that puff pastry easily available on online shopping platforms. I got the ready-made pastry and here we have an egg puff recipe for you. You can’t find any south Indian bakery without crispy and flaky puffs. Not surprisingly this is one of the hot-selling bakery items. Trust me, my son appreciated me for this egg puff recipe and he felt that masala is so great.

Egg Puffs | Kerala Style Egg Puffs | South Indian Egg Puff preparation with step-by-step photos and a quick video.

Ingredients
- Eggs - 3 (soft boil the egg for 7 minutes)
- Onions sliced-3
- Green chillies-2
- Ginger-Garlic paste - 1 tsp
- Curry leaves-few
- Oil- 2 tbsp
- Fennel seeds- ½ tsp
- Turmeric powder-¼ tsp
- Coriander powder - ½ tsp
- Red chilly powder- ½ tsp
- Garam masala - ½ tsp
- Pepper powder – ½ tsp
- Meat masala powder - 1 tsp
- Salt to taste
- Water - 2 tbsp
- Finely chopped coriander leaves - 2 tbsp
- Egg- 1 (beaten with a T spoon of water)
Directions
- Step 1 Hard boil the eggs, remove the shell and cut into halves. Set aside.
- Step 2 Take a pan and add oil
- Step 3 Add fennel seeds
- Step 4 Add green chili and saute it well
- Step 5 Add sliced onion and saute it well until onions transparent
- Step 6 Add salt
- Step 7 Add turmeric powder
- Step 8 Add red chili powder
- Step 9 Add coriander powder
- Step 10 Add curry masala powder
- Step 11 Add garam masala powder
- Step 12 Add pepper powder and saute it well for few minutes
- Step 13 add water and mix it well
- Step 14 Cover the lid and cook for a minute
- Step 15 Add coriander leaves and mix it well. Keep it aside
- Step 16 For the puffs use Swits puff parotta dough cut into squares
- Step 17 Add the masala into the center of the dough
- Step 18 Add half of the boiled egg
- Step 19 Using your fingers seal the puffs perfectly.
- Step 20 Brush the puff lightly with the egg wash.
- Step 21 Preheat the oven to 200 degrees Celsius and bake the puff for 30-35 minutes till golden and puffed.
- Step 22 Serve hot with Tomato ketchup and a Kerala chai or fresh lime soda!

12. Add pepper powder and saute it well for few minutes

13. Add water and mix it well

14. Cover the lid and cook for a minute

15. Add coriander leaves and mix them well. Keep it aside

16. For the puffs use Swits puff parotta dough cut into squares

17. Add the masala into the center of the dough

18. Add half of the boiled egg

19. Using your fingers seal the puffs perfectly.

20. Brush the puff lightly with the egg wash.

21. Preheat the oven to 200 degrees Celsius and bake the puff for 30-35 minutes till golden and puffed.
