Ingredients
- Yellow pumpkin - 2 cups
- Shallots (small onion) - 1cup chopped
- Dried red chilli -2
- Green chilli -2
- Groundnut oil - 2 tbsp
- Mustard seeds- 1/2 tsp
- Urad dal - 1/2 tsp
- Curry leaves-2 sprigs
- Turmeric powder- 1/2 tsp
- Salt - to taste
- Shredded coconut - 1/4 th cup
Directions
- Step 1 Heat up the pan first then add groundnut oil
- Step 2 Add mustard seed and let it splutter
- Step 3 Add urad dal and let it turn to golden colour
- Step 4 Add curry leaves
- Step 5 Add shallots(small onion)
- Step 6 Add green chillis & red chillis and saute well
- Step 7 Add the chopped pumpkin.
- Step 8 Add turmeric powder and salt.
- Step 9 Saute well in low flame .If you want more sweetness, you could add small pieces of jaggery.
- Step 10 Cover and cook for 10 minutes (If its a tender pumpkin, please do not add water. Otherwise, add a little bit of water). Pumpkin is very soft and it could overcooked if leave you it for longer.
- Step 11 Add freshly grated coconut and mix it very gently.
- Step 12 The yummy yellow pumpkin stir fry is done. Serve it with hot rice.
