Steam foods are very good for health. Most of the steam foods are made without oil and that says why it’s so healthy. In this recipe, I have used the red rice which is enriched with the goodness of antioxidants and magnesium. I would recommend cooking this recipe at least in a week for a healthy lifestyle. Chemba Puttu /Red Rice Puttu is ideal for breakfast.

Chemba Puttu Recipe/Red Rice Puttu Recipe - Kerala's Special Puttu preparation with step by step photos and a quick video.

Ingredients
  • Chemba/Red rice flour- 1 cup
  • Salt - to taste
  • Water- 1/4 th cup as required
  • Grated coconut - 1 cup
Directions
  • Step 1 Take a large bowl and add one cup of chemba/red rice puttu flour .
  • Step 2 Add salt to taste and mix it well
  • Step 3 Add ¼ cup water and crumble the flour.Add water in batches and mix well with your fingertips.
  • Step 4 Flour need to hold shape when pressed between the fist and need to break on further pressing. Make a moist flour with a crumbly texture.
  • Step 5 Rest the flour for 10 minutes. By the time boil water in Puttu kutti.
  • Step 6 Take a puttu steamer and layer with 2 tbsp of freshly grated coconut.
  • Step 7 Followed by 3 tbsp of puttu flour. Again layer with 2 tbsp of coconut,3 tbsp of puttu flour. Add 2 tbsp coconut and level it up.
  • Step 8 Close the puttu Kutti (cylindrical tube) and steam for 8 to 10 minutes or till the steam escapes from top holes of puttu kutti(cylindrical tube).
  • Step 9 Carefully open it and push the puttu using a wooden ladle from the back.
  • Step 10 Serve Kerala’s special puttu along with Jaggery, Banana and Ghee.

Making of  Chemba Puttu Recipe/Red Rice Puttu Recipe/Kuzha Puttu/ Kerala’s Special Puttu :

10. Serve Kerala’s special puttu along with Jaggery, Banana and Ghee.
