Rava Kesari is a quick south Indian dessert recipe. It’s made with Rava/Semolina/Sooji, sugar, cow ghee, cashew nuts and dry grapes. Rava Kesari is delicious and it will melt in your mouth while having it. Most of the south Indian hotels serve Kesari as a dessert in meals. The recipe looks simple but one should not overcook while preparing.

Ingredients
- Bombay Rava ( sooji / semolina) - 1 cup
- Ghee ( clarified butter) - 2 tbsp + ¼ cup
- Cashews ( kaju)-10
- Raisins ( kishmish / dry grapes)-1 tbsp
- Water -2 cup
- Sugar - 1 cup
- Kesari food color - a pinch
- Cardamom power (elachi powder) -¼ tsp
Directions
- Step 1 Take a pan and add ghee (clarified butter)
- Step 2 Add cashews and roast in low flame
- Step 3 Add raisins and saute it well in low flame.
- Step 4 Once the cashews and raisins turns golden brown, keep it aside.
- Step 5 In the same ghee, add rava and roast it for a few minutes.
- Step 6 Once it turns to aromatic, keep it aside.
- Step 7 Take a large kadai, boil 2 cups of water.
- Step 8 Add roasted rava and mix it well. Keep cooking in low flame.
- Step 9 Stir continuously till the rava absorbs water and no lumps are formed.
- Step 10 Add sugar and mix it well until the sugar dissolves. (Adjust your sugar level as per your need).
- Step 11 Add ghee and stir continuously.
- Step 12 Add Kesari food colour and mix it well
- Step 13 Add cardamom powder and mix it well
- Step 14 Add roasted cashews, raisins. Mix it well until Rava Kesari separates from the pan.
- Step 15 Serve Rava Kesari / Kesari bath .
