Basbousa Recipe / Middle Eastern semolina cake preparation with step by step photos and a quick video. Are you bored of Indian deserts? Wanna try something new? Basbousa (also knowns as Harissa/Ravani) is very famous in middle east countries. I don’t how to describe this sweet. It’s either like complete sweet nor like cake. We have really enjoyed this sweet because it doesn’t overpower the sweet. It’s very mild, unique flavour and syrup can be our desired flavour. I have tried with Rosewater.

Basbousa Recipe / Middle Eastern semolina cake
Ingredients
- Coarse Rava (semolina/sooji) - 1 ½ cup
- Sweetened condensed milk - ½ tin
- Baking powder - 1 tsp
- Roasted coconut - 1 cup
- Ghee - ½ cup
- Curd - 1 tbsp
- Vanilla essence - 1 tsp
- Salt - ¼ tsp
- Almonds (blanched and peeled)- ½ cup
- Ingredients for Syrup:
- Sugar - 1 cup
- Water - 1 cup
- Lemon juice -1 tsp
- Rosewater -1 tsp
Directions
- Step 1 Preheat the oven to 180°C. Lightly grease a square (or rectangular ) baking dish. (Unfortunately, I don’t have one!!)
- Step 2 Take a pan and add grated coconut.
- Step 3 Dry roast for few minutes and keep it aside .
- Step 4 Take a mixing bowl and add semolina
- Step 5 Add roasted coconut
- Step 6 Add add baking powder.
- Step 7 Add salt
- Step 8 Add Vanilla essence
- Step 9 Add ghee
- Step 10 Add curd
- Step 11 Add sweetened condensed milk
- Step 12 Add water and mix it well
- Step 13 Transfer the mixture into the prepared baking pan.
- Step 14 Pat the dish gently to even out the surface
- Step 15 Bake at 190 degrees Celsius for 20 minutes
- Step 16 Meanwhile let’s prepare the sugar syrup. Take a pan and add sugar
- Step 17 Add water
- Step 18 Add rose water and mix it well
- Step 19 Cook for 5 minutes
- Step 20 Add lemon juice and mix it well. Keep it aside.
- Step 21 Once the cake is baked for 20mins, take it out and cut into square or diamond shape.
- Step 22 Add blanched almonds on top of the Basbousa pieces.
- Step 23 Once the almonds topping is done, again bake at 190-degree Celsius for 20 minutes
- Step 24 Once the baking is done, take out the Basbousa and pour the cooled syrup.
- Step 25 Rest for 2 to 4 hours to cool down to room temperature. This makes sugar syrup to absorb completely.
- Step 26 Enjoy Basbousa with loved ones. Keep it in refrigerate.
