Green chutney adds spice and mint flavors whereas sweet tamarind dates chutney adds tangy and sweetness to the chaat. You could prepare this chutney and refrigerate it for at least a week.

Ingredients
- Green chutney :
- Coriander leaves -1 cup
- Mint leaves (pudina)-½ cup
- Garlic -2
- Ginger -½ inch
- Green chilli -4
- Cumin powder (jeera powder)-½ tsp
- Chaat masala -1 tsp
- salt- to taste
- Lemon juice -1 tbsp
- Tamarind date chutney:
- Tamarind (imli) -½ cup,seedless
- Dates (khajoor) -½ cup, seedless
- Water- ½ cup
- Jaggery (gud) -½ cup
- Cumin powder (jeera powder) -½ tsp
- Kashmiri red chili powder (lal mirch powder) -1 tsp
- Dry ginger powder (sonth- saunth powder) -½ tsp
- Fennel powder (saunf powder) -½ tsp
- Coriander powder (dhaniya powder) -1 tsp
- salt- to taste
Directions
- Step 1 Take a mixer-jar and add coriander leaves
- Step 2 Add mint leaves
- Step 3 Add ginger
- Step 4 Add garlic
- Step 5 Add green chili
- Step 6 Add salt
- Step 7 Add cumin powder
- Step 8 Add chaat masala
- Step 9 Add lemon juice
- Step 10 Grind smooth paste by adding little amount of water.
- Step 11 Green chutney is ready to use for sandwich or chaats
- Step 12 Take a large Kadai and add soaked tamarind
- Step 13 Add dates
- Step 14 Add jaggery
- Step 15 Add water and mix it well
- Step 16 Boil the mixture for 10 minutes.
- Step 17 Add fennel powder
- Step 18 Add coriander powder
- Step 19 Add cumin powder
- Step 20 Add Kashmiri red chili powder
- Step 21 add salt to taste.
- Step 22 Add dry ginger powder and mix it well
- Step 23 Boil for 2 minutes
- Step 24 Transfer the dates, tamarind mixture to the strainer and strain the puree(Khajoor imli ka chutney into an airtight jar and store it in the refrigerator)
- Step 25 Tamarind date chutney is ready to use for sev puri, bhel puri

Green chutney :

3. Add ginger
4. Add garlic
5. Add green chili
6. Add cumin powder
7. Add chaat masala
8. Add salt
9. Add lemon juice
10. Grind smooth paste by adding little amount of water.
11. Green chutney is ready to use for sandwich or chaats
Tamarind date chutney:
1. Take a large Kadai and add soaked tamarind
2. Add dates
3. Add jaggery
4. Add water and mix it well
5. Boil the mixture for 10 minutes.
6. Add fennel powder
7. Add kashmiri red chili powder
8. Add coriander powder
9. Add cumin powder,
10. Add dry ginger powder
11. Add salt to taste and mix it well
12. Boil for 2 minutes
13. Transfer the dates, tamarind mixture to the strainer and strain the puree(Khajoor imli ka chutney into an airtight jar and store it in the refrigerator)
14. Tamarind date chutney is ready to use for sev puri, bhel puri
