Ivy gourd / Kovakkai is a poor man’s vegetable. It’s very cheap and available everywhere. Personally, I don’t like Ivy gourd / Kovakkai side-dish unless I found this recipe. Ivy gourd/Kovakkai prevents obesity, defence nervous system, improves digestion and prevents kidney stones. Do we need to include ivy gourd/Kovakkai in our diet? We must !!! This recipe would be the perfect side dish for curd rice.

Tindora Stir Fry / Ivy gourd Stir Fry / Kovakkai Fry Recipe preparation with step by step photos and a quick video
Ingredients
- Tindora (Kovakkai)- 30
- Onion - 1 chopped
- Ginger garlic paste - 1 tsp
- Red chili powder - 1 tsp
- Coriander Powder - 2 tsp
- Turmeric powder - 1/2 tsp
- Garam Masala Powder - 1/2 tsp
- Salt - to taste
- Gram flour/Kadalai maavu - 2 tbsp
- Oil - 2 tbsp
- Mustard - 1 tsp
- Cumin seeds - 1/2 tsp
- Curry Leaves - few
Directions
- Step 1 Take a pan and add oil
- Step 2 Add mustard seed and let it splutter
- Step 3 Add cumin seed and saute it well
- Step 4 Add chopped onion and saute it well
- Step 5 Add curry leaves and saute it well
- Step 6 Add ginger garlic paste and saute it well
- Step 7 Add tindora(Kovakkai) and saute it well in high flame
- Step 8 Cover the lid and cook for 10minutes. Until the veggie turns tender. Make sure you give a stir every 2 minutes to avoid burning.
- Step 9 Once cooked, add turmeric powder
- Step 10 Add coriander powder
- Step 11 Add red chilli powder
- Step 12 Add garam masala powder
- Step 13 Add salt to taste and saute it well in medium flame to combine well.
- Step 14 Add gram flour (try to sprinkle) and giving a quick stir
- Step 15 Keep frying until everything sticks well to the tindora(Kovakkai).
- Step 16 Serve with rice dishes, sambar, rasam or curd rice.
