Ghevar

 

Ghevar is a traditional Rajasthani dessert. It’s is disc-shaped crunchy sweet made with all-purpose flour. Ghevar is mainly served after pouring sugar syrup or mildly topped with milk rabdi. It mainly prepared during Teej, Holi and Raksha Bandhan festivals in north India. I would recommend using a deep pan to make ghevar to reduce the oil spill outside. Please wear gloves while dropping the batter into the oil.

Ghevar / How to Make Ghevar sweet? Rajasthani Dessert preparation with step by step photos and a quick video.

Ingredients
  • Ghee ( clarified butter) -½ cup
  • Ice -1 block
  • Maida ( plain flour / refined flour)- 2 cups
  • Milk - ½ cup chilled
  • Water -3 cup chilled
  • Lemon juice - 1 tsp
  • For Sugar Syrup:
  • Sugar -1 cup
  • Water -½ cup
  • Other Ingredients
  • Oil/ghee for deep frying
  • Dry fruits, for garnishing
  • Cardamom powder (elachi powder) -¼ tsp
  • silver vrak for garnishing
Directions
  • Step 1 Take a mixing bowl and add melted ghee
  • Step 2 Add ice block and rub it
  • Step 3 Add maida and crumble well.
  • Step 4 Add chilled milk
  • Step 5 Add chilled water and mix it well
  • Step 6 Add 1 cup of chilled water(add one tsp of lemon juice )
  • Step 7 Make a smooth flowing consistency
  • Step 8 Heat ghee/oil in a deep pan on high heat
  • Step 9 Pour the prepared batter from a height of at least 7 inches. Pour it little by little in a constant flow into the centre of the pan. Ghevar batter will sizzle up and spread immediately to the corners.
  • Step 10 Wait for a few seconds and then pour another ladle. Pour few more ladles of batter, repeating the same steps again.
  • Step 11 Once you are fine the ghevar shape, take a stick and dip ghevar inside the oil to make it cooked evenly.
  • Step 12 Once it’s done, carefully insert the stick in the centre of the ghevar and take out of the pan.
  • Step 13 Take a pan and add sugar
  • Step 14 Add water
  • Step 15 Bring to boil for 5 minutes
  • Step 16 boil till 2 string consistency is attained and keep it aside
  • Step 17 keep the Ghevar in a dry plate and pour sugar syrup evenly. You could also spread milk rabdi if you like it.
  • Step 18 Sprinkle cardamom powder and garnish ghevar with nuts and silver paper.
  • Step 19 Enjoy the crunchy Ghevar!!!
