In Bangalore, you find pani puri stalls in every 100mts on the crowded streets. Covid19 disapparated those stalls and made people keep away from those street foods. This pandemic made me realize that we could even prepare better pani poori at home in less than 40mins effort for the whole family. You could either make puri at home or get it from the shop.If you are making puri at home, quickly transfer those to zip lock cover to maintain crispness.

Ingredients
- For Puri :
- Sooji / semolina / rava -1 cup
- Maida / plain flour / all purpose flour / refined flour -2 tbsp
- Baking soda- ¼ tsp
- Salt - to taste
- Oil -1 tbsp
- Water-½ cup
- For Pani:
- Mint-1 cup Handful
- Coriander- 1 cup
- Tamarind extract - ½ Cup
- Green Chili - 2
- Ginger - 1 inch
- Salt - To Taste
- Black Salt -½ tsp
- Cumin Powder - 1½ tsp
- Coriander Powder - 1 tsp
- Pepper - ½ Tsp
- Red Chili Powder - ½ tsp
- Lemon Juice - 1 tsp
- Amchoor Powder - 1 tsp
- Water -4 glass
- For Filling:
- Potatoes- 3,Boiled & mashed
- Kala Chana - ¼ Cup ,Boiled
- Onions: ¼ Cup ,Roughly Chopped
- Green chutenry - 1½ tsp
- Salt - To Taste/1
- Black Salt - ½ tsp
- Red Chili Powder - 1tsp
- Cumin Powder - 1 tsp
- Coriander Powder - 1 tsp
- Amchoor Powder - ½ tsp
Directions
- Step 1 For Puri:
- Step 2 Take a large mixing bowl and add sooji
- Step 3 Add maida
- Step 4 Add salt
- Step 5 Add baking soda and mix it well
- Step 6 Add water and knead well
- Step 7 Cover and rest for 20 minutes or untill the rava absorbs moisture.
- Step 8 Divide the dough into half and dust with maida.
- Step 9 Roll the dough as thin as possible using a rolling pin.
- Step 10 Take a small cup and start to make small puris.
- Step 11 Drop the prepared puri and press with the spoon to puff up.
- Step 12 Fry the puri till golden brown and crisp.
- Step 13 Drain over paper towel. Repeat to finish. Golgappa puri is ready to prepare Pani puri
- Step 14 For Pani: Take a mixer-jar and add coriander leaves
- Step 15 Add mint leaves
- Step 16 Add ginger
- Step 17 Add green chili
- Step 18 Grind smooth paste by adding little amount of water.
- Step 19 Transfer the mixture to the strainer and strain the puree
- Step 20 Add water and mix it well
- Step 21 Add tamarind extract
- Step 22 Add coriander powder
- Step 23 Add red chili powder
- Step 24 Add jeera powder
- Step 25 Add amchoor powder
- Step 26 Add pepper powder
- Step 27 Add salt to taste
- Step 28 Add black salt
- Step 29 Add lemon juice and mix it well
- Step 30 Theeka pani is ready to enjoy with golgappa.
- Step 31 For Masala/Filling: Take a mixing bowl and add the mashed potatoes
- Step 32 Add Kala chana
- Step 33 Add chopped onion
- Step 34 Add green chutney
- Step 35 Add red chili powder
- Step 36 Add coriander powder
- Step 37 Add amchoor powder
- Step 38 Add jeera powder
- Step 39 Add black salt
- Step 40 Add salt to taste and mix it well
- Step 41 Aloo stuffing is ready to enjoy with puchka.
- Step 42 Take a puri and make a small hole in the center of puri.
- Step 43 Stuff a tsp of prepared aloo stuffing into a puri.
- Step 44 Dip into the theeka pani
- Step 45 Add chopped onion and enjoy.
- Step 46 Pani puri recipe is ready to serve.

38. Add salt to taste and mix it well

40. Take a puri and make a small hole in the center of puri.
41. Stuff a tbsp of prepared aloo stuffing into a puri.
42. Dip into the theeka pani
43. Add chopped onion and enjoy.
44. Pani puri recipe is ready to serve.
