In Tamilnadu, especially in Coimbatore, there are three major chaat items that you can’t ignore. I had already posted one of the recipes – Roadside kaalan. Here, I would like to share the key recipe for masala poori and bhel poori. These chaat items taste rely on the white peas gravy. I am a regular customer for one of the roadside food shop and I kept asking to share the recipe. Finally, I got the secret a few months ago when I had visited native. I hope you will like it too.

Ingredients
- Dried white peas -1 cup
- Onion -1, finely chopped
- Tomato -2 finely chopped
- Ginger -1 inch
- Garlic - 10
- Turmeric Powder-½ tsp
- Coriander Powder- 1 tsp
- Cumin powder (jeera powder)-½ tsp
- Kulambu milagai thool - 1 tbsp
- Garam Masala Powder
- Salt- to taste
- For Garnishing
- Onion - 2 tbsp,finely chopped
- Coriander Leaves - 1tbsp, finely chopped
- Carrot - 1 tbsp,grated
Directions
- Step 1 Add dried white peas
- Step 2 Add water
- Step 3 Soak it for overnight or for at least 12 hours
- Step 4 Drain off the water and transfer to the cooker.
- Step 5 Add turmeric powder and salt
- Step 6 add water and mix it well
- Step 7 Pressure cook for 5 whistles or until peas get cooked completely.
- Step 8 Take a mixer-jar and add onion
- Step 9 Add tomato
- Step 10 Add garlic and ginger
- Step 11 add green chili and grind it a smooth paste and keep it aside
- Step 12 Heat the pan and add oil
- Step 13 Add kulambu milagai thool.
- Step 14 Add coriander powder
- Step 15 Add jeera powder and mix it well. Do not burn
- Step 16 Add onion tomato paste and saute it well.
- Step 17 Once raw smell leaves, add boiled peas, and mix it well.
- Step 18 Boil for 5 minutes or until the spices are absorbed.
- Step 19 Mash the peas slightly, to thicken the consistency.
- Step 20 Add salt and garam masala and mix it well
- Step 21 Add water and mix it well
- Step 22 Add finely chopped coriander and mix it well
- Step 23 Add grated carrot
- Step 24 Add finely chopped onions
- Step 25 Add finely chopped coriander
- Step 26 The delicious streetside style white peas masala gravy is ready.
