Are you bored with plain Muffins? Wanna add more flavours to it? Let’s add Banana and Walnut to make yummy and crunchy Muffins at home easily. Of course, I am going to try eggless Muffins. How many of us noticed that Walnut looks like our brain ?. Walnut contains a high concentration of DHA, a type of Omega-3 fatty acid. It supports good brain function including faster processing speed, more mental flexibility.
I personally avoid store-bought muffins because of preservatives and prefer to make it at home.

Eggless Banana Walnut Muffins / Banana Nut cupcake
Eggless Banana Walnut Muffins / Banana Nut cupcake preparation with step by step photos and a quick video.
Ingredients
- Maida (All Purpose Flour ) - 1 cup / 120 grams
- Sugar - ½ cup / 100 grams
- Baking Soda / Cooking Soda- ½ tsp
- Baking Powder-½ tsp
- Ripe Banana - 1 cup mashed ( I used 4 Banana )
- Oil-¼ cup / 60 ml
- Vanilla Essence -1 tsp
- Walnuts - ½ cup
Directions
- Step 1 Preheat oven to 190 degree Celsius
- Step 2 Take a mixing bowl and add mash bananas
- Step 3 Add sugar
- Step 4 Add oil
- Step 5 Add vanilla essence and mix it well.
- Step 6 Add baking soda
- Step 7 Add baking powder
- Step 8 Add All Purpose Flour (Maida) and fold it gently.
- Step 9 Add walnuts and mix it gently.
- Step 10 Scoop the cake batter and pour into cupcake liners to ¾(three fourth) full. Don’t fill it completely to avoid overflow while baking.
- Step 11 Roughly spread few walnut pieces over the cupcake batter.
- Step 12 Bake the cake at 190 °C degree Celsius or 374 degrees Fahrenheit for 25 minutes.
- Step 13 Insert a toothpick at the centre and see if it comes out clean. Else bake for 5 more minutes..
- Step 14 Now remove it from the tray and let it cool.
- Step 15 Enjoy the yummy and crunchy Walnut Banana muffins.
