Let’s make whole wheat Jaggery cookies at home. In the Indian bakery, you can find the cookies mostly made up of maida and refined sugar. Of course, it’s tasty but not healthy enough to consume on a daily basis. Recently I have found a baking cookbook which provides the step by step procedure to make cookies using whole wheat and Jaggery. It’s not gonna be tastier than bakery cookies but good for health. Ingredients
- Whole wheat flour - 1½ cup
- Cardamom powder - 1 tsp
- Cinnamon powder -¼ the tsp
- Salt -¼ the tsp
- Ghee/clarified butter- 1 cup (semi-solid form (not melted))
- Jaggery powder -½ cup
- Milk- 3 tbsp
Directions
- Step 1 Pre-heat oven to 180 degree Celsius. Line a baking sheet with parchment paper and keep it aside.
- Step 2 Take a large mixing bowl and add whole wheat flour
- Step 3 Add salt
- Step 4 Add baking powder
- Step 5 Add cardamom powder
- Step 6 Add cinnamon powder and mix it well. Keep it aside.
- Step 7 Take another bowl and add sifted jaggery powder. (Get rid of any large particles)
- Step 8 Add ghee/clarified butter
- Step 9 Add milk and mix it using a whisk until combined and fluffy.
- Step 10 Transfer the jaggery-ghee mixture to the flour mixer and mix it well until it forms a dough. (If the dough isn’t coming together, you may need to add 1/2 tablespoon milk)
- Step 11 Cover and let the dough rest for 10 to 15 minutes.
- Step 12 Then roll the dough using a roller.
- Step 13 Cut into circles of 2-inch diameter, around 1/4 inch thick.
- Step 14 Transfer cookies to a baking sheet lined with parchment paper.
- Step 15 Pierce with a fork and make a design on top.
- Step 16 Bake at 180-degree Celsius for 16-18 minutes or until it becomes crisp and turns dark golden brown in colour.
- Step 17 Let’s cool completely and store in an airtight container (Not more than 3 weeks).
