Crispy South Indian Masala Vada /Masala Paruppu Vadai

Crispy South Indian Masala Vada /Masala Paruppu Vadai preparation with step by step photos and a quick video.

Ingredients
  • Yellow split peas - 2 cups
  • Cinnamon stick (Patta/Dalchini) - ½ inch
  • Fennel(Sombu/Saunf) - 1 tsp
  • Red chilli - 6
  • Onion - 1 cup chopped
  • Curry leaves - few
  • Coriander Leaves - ½ cup
  • Asafoetida (Hing) - ¼ tsp
  • Salt - to taste
Directions
  • Step 1 Take a large bowl and add add yellow split peas.
  • Step 2 Add water and soak it for 3 hours.
  • Step 3 Drain off the water completely. ( You could rest it for 5 minutes to drain off the water)
  • Step 4 Add ginger
  • Step 5 Add garlic
  • Step 6 Add cinnamon stick (Patta/Dalchini)
  • Step 7 Add red chili
  • Step 8 Add fennel(Sombu/Saunf)
  • Step 9 Transfer the soaked dal mix to a blender and blend to a coarse paste without adding water.
  • Step 10 Transfer the coarse dal paste into a large mixing bowl.
  • Step 11 Add reserved soaked dal
  • Step 12 Add chopped onion
  • Step 13 Add chopped few curry leaves
  • Step 14 Add chopped coriander leaves
  • Step 15 Add salt to taste
  • Step 16 Add asafoetida (hing) and mix it well
  • Step 17 Take a Kadai and heat oil. Grease your hand with oil and take a small ball sized dough and make it flatten.
  • Step 18 Drop the vada in oil and deep fry it medium flame.
  • Step 19 Fry on both sides till it turns to golden brown and crisp.
  • Step 20 Serve hot Masala vada. This is a perfect evening snack along with Tea.

Making of Crispy South Indian Masala Vada /Masala Paruppu Vadai:

 

1.  Take a large bowl and add add yellow split peas.

2. Add water and soak it for 3 hours.

3. Drain off the water completely. ( You could rest it for 5 minutes to drain off the water)

9. Transfer the soaked dal mix to a blender and blend to a coarse paste without adding water. Transfer the coarse dal paste into the large mixing bowl.
