Around 10years back in my home town(Erode/Coimbatore), We use to prepare murukku in large quantities prior to Pongal. During Pongal, we use to watch special programs on TV by having murukku snacks aside. This year, we had exactly replicated and recorded in-camera as well. Ingredients
- Idli Rice -6 kg
- Puzhungal Arisi(Parboiled Rice) -1kg
- Roasted gram dal/Pottu kadalai - 2 kg (grind & sifted)
- Gram flour(Chickpea Flour / besan / kadalai maavu)-½ kg
- Dried red chili - 200 gm
- Jeera/Cumin seeds- 100 gm
- Curry leaves- 100 gm
- Ajwai/Omam-50 gm
- Sesame seeds -50 gm
- Asafoetida(Hing)- 25 gm
- Salt to taste
- Dalda melted-200 ml
- Hot Oil -100ml
- Oil to deep fry
Directions
- Step 1 Wash and soak idli rice & puzhungal Arisi for 3 hours.
- Step 2 Add to the grinder and grind it using little water to a smooth batter.
- Step 3 Add dried red chili
- Step 4 Add curry leaves
- Step 5 Add water and salt
- Step 6 add asafoetida(hing)
- Step 7 Add jeera and grind it smooth paste
- Step 8 Add soaked rice and grind it smooth paste
- Step 9 Then transfer the ground batter to a mixing bowl
- Step 10 Add cleaned sesame seeds and ajwain (omam)
- Step 11 Add sifted pottukadalai maavu and mix it well
- Step 12 Add gram flour(Chickpea Flour/besan / kadalai maavu) and mix it well
- Step 13 Add melted dalda and hot oil. Mix everything well to a soft and smooth dough.
- Step 14 Heat oil in a Kadai to deep fry. Then grease murukku achu with oil and fill with it with one divided ball. Close it tightly. Use any desired achu/plate for making murukku
- Step 15 Heat the oil and shape the dough into a greased plate or ladle. Drop it when oil gets hot.
- Step 16 Flip the chaklis and fry till it turns golden brown and crispy from both sides.
- Step 17 Once done remove from the oil and drain it in paper towel.
- Step 18 After cooling store the murukku in an airtight container.
- Step 19 This murukku remains good for up to 3 weeks.
- Step 20 Super crunchy and tasty Puzhungal Arisi Murukku is ready. Enjoy Pongal with Special Murukku.
