Vada pav is one of the most common food in Maharashtra where people are ready to eat as breakfast as well as an evening snack. This Indian style burger ‘s very important is making crispy aloo vada. It’s slightly different from batata vada where patties are oval-shaped. In vada pav, we are adding three different chutneys to get all the different tastes (tangy, sweet, spice).

Ingredients
- Potato - 3, boiled & mashed
- Green chilli-1,chopped
- Garlic - 2
- Ginger -1 tbsp ,finely chopped
- Coriander Leaves - 2 tbsp
- Turmeric -½ tsp
- Salt - to taste
- Asafoetida (hing) - ¼ tsp
- Oil - 2 tsp
- Mustard - ½ tsp
- Curry leaves - 1 sprig
- For batter
- Besan flour - 1cup
- Rice flour - ¼ cup
- Asafoetida (hing) - ¼ tsp
- Cooking soda - ¼ tsp
- Red chilli powder -1 tsp
- Salt - to taste
- Other Ingredients
- Ladi pav / dinner rolls -3
- Green chilli -5
- Green chutney -2 tbsp
- Tamarind chutney -2 tbsp
- Dry garlic chutney -2 tbsp
Directions
- Step 1 Take a bowl and add besan
- Step 2 Add rice flour
- Step 3 Add red chilli powder
- Step 4 Add asafoetida (hing)
- Step 5 Add salt
- Step 6 Add baking soda and mix it well
- Step 7 Add water. (Add water little by little to form a thick batter)
- Step 8 Make it to a thick paste without any lumps and keep it aside.
- Step 9 Take a pan and add oil
- Step 10 Add mustard seed
- Step 11 Add asafoetida (hing)
- Step 12 Add curry leaves and saute it well
- Step 13 Add garlic
- Step 14 Add chopped ginger
- Step 15 Add green chili and saute it well
- Step 16 Add turmeric powder and saute it well
- Step 17 add salt and mix it well
- Step 18 Add coriander leaves and saute it well
- Step 19 Add boiled and mashed potato and mix it well. Let it cool down
- Step 20 Once it gets cool down take a small ball sized mixture and make it round.
- Step 21 Dip each ball in the batter, turn to coat well on both sides.
- Step 22 Slowly drop into hot oil and deep fry in medium flame.
- Step 23 Fry on both sides till it turns to golden brown and crisp
- Step 24 Drain it in tissue paper.
- Step 25 Take the leftover besan batter and pour to the hot oil
- Step 26 fry on medium flame till the Chura turns golden and crisp.keep aside
- Step 27 Add green chili and fry until golden brown and drain out the oil
- Step 28 Take a ladi pav and slit in the center
- Step 29 add green chutney a spread well
- Step 30 Add tamarind chutney and spread it well
- Step 31 Add dry garlic chutney
- Step 32 Place the prepared vada in center of pav
- Step 33 Add Chura
- Step 34 Add fried chili.
- Step 35 Press the vada pav and serve immediately.
