Chicken Briyani can be prepared in a vast range of ways including Hyderabadi style, Kerala style. Mogula style and typical Tamilnadu style. In this recipe, I will show you the preparation of Tamilnadu style – Juice chicken biryani(Added Little more oil & Ghee it make juice). If you want, you can reduce the oil & Ghee while trying it. This will make the rice a little bit dry. You could also checkout Kogunadu style chicken biriyani which I have tried long back.

Ingredients
- Basmati Rice – 1.5 cup
- Chicken – 1 kg
- Onion – 2 big chopped lengthwise
- Tomato -1 chopped roughly
- Ginger-Garlic paste – 2 tbsp
- Home Made Biryani Masala powder – 1/2 tsp
- Red Chilli powder – 1 tsp
- Turmeric powder – 1/2 tsp
- Coriander powder – 1 tsp
- Water – 2 cup
- Salt – to taste
- Coriander leaves – 1/2 cup
- Mint leaves – 1/4 cup loosely packed
- Green Chillies – 2
- Oil – 3 tbsp
- Ghee – 3 tbsp
Directions
- Step 1 Heat a pressure cooker and add oil.
- Step 2 Add ghee.
- Step 3 Add Bay leaf(tej patta).
- Step 4 Add Cinnamon stick (Pattai/Dalchini)
- Step 5 Add Cloves (Karampu/Lavang)
- Step 6 Add Star Anise (Anisipu/Chakkar phool)
- Step 7 Add Black Stone Flower(Kalpasi)
- Step 8 Add Kapok Buds(Marathi moggu)
- Step 9 Add Cardamom(Elachi)
- Step 10 Add Pepper (Milagu/Kali Mirch)
- Step 11 Add Fennel(Sombu/Saunf)
- Step 12 Add onion and saute it well
- Step 13 Add ginger garlic paste and saute it well
- Step 14 Add green chilli and saute it well
- Step 15 Add mint leaves
- Step 16 Add coriander leaves and saute it well
- Step 17 Add chopped tomato and saute it well
- Step 18 Add salt to taste and turmeric powder
- Step 19 Add red chilli powder and coriander powder.
- Step 20 Add homemade biryani masala powder and saute it well until raw smell leaves
- Step 21 Add cleaned and washed chicken pieces. Saute it well in until turns to white colour
- Step 22 Add soaked basmati rice and mix it gently(If you over mix, it will be broken)
- Step 23 Add 2 cups of water and mix it well
- Step 24 Add lemon juice and mix it well
- Step 25 Cover the lid and cook for 3 whistles.
- Step 26 Once pressure releases, fluff it carefully without breaking the rice.
- Step 27 Serve it hot with onion raita…. yummm !!!!
