How to make Roadside Kaalan gravy? Southern India's Street food preparation with step by step photos and a quick video.
Ingredients
- For Fry:
- Mushroom - 1 cup
- Cabbage - 1 cup
- Corn flour -¼ cup
- Maida ( plain flour / all purpose flour)- ½ cup
- Ginger Garlic paste - ½ tsp
- Kashmiri red chilly powder - 1 tsp
- Garam masala - ½ tsp
- Salt - to taste
- For Masala:
- Oil- 1 tsp
- Onion - 1chopped
- Curry leaves - few
- Green Chilli-1
- Ginger Garlic paste - ½ tsp
- Kashmiri red chilly powder - 1 tsp
- Garam masala - ½ tsp
- Soya Sauce - ½ tsp
- Red Chilli Sauce -½ tsp
- Green Chilli Sauce-½ tsp
- Salt - to taste
- Water - 2 cup
- Corn flour- 2 tsp
- Oil(for deep fry) - 1 cup
- Coriander leaves - 1 tbsp
- Onion - 2 tbsp
Directions
- Step 1 Take a mixing bowl and add chopped cabbage
- Step 2 Add chopped mushroom
- Step 3 Add salt
- Step 4 Add garam masala powder
- Step 5 Add red chilli powder and mix it well
- Step 6 Add ginger garlic paste and mix it well
- Step 7 Add water mix it well
- Step 8 Take the mixture in small dollops and deep fry in hot oil . Stir occasionally.
- Step 9 Once it turned to golden & crisp, drain out from oil. Keep it aside.
- Step 10 Take a pan and add oil
- Step 11 add chopped onion and saute it well
- Step 12 Add curry leaves
- Step 13 Add chopped green chili
- Step 14 Add ginger garlic paste and saute it for a few minutes
- Step 15 add tomato puree and saute it well
- Step 16 Add salt
- Step 17 Add garam masala powder
- Step 18 Add red chili powder and saute it until raw smell leaves
- Step 19 Add red chili sauce
- Step 20 Add green chili sauce
- Step 21 Add soy sauce and mix it well
- Step 22 Add water and mix it well
- Step 23 Take cornflour and add water and mix it well
- Step 24 Add cornflour slurry and stir continuously.
- Step 25 Once’s it turns glossy, adds fried cabbage and mushroom and mixes it gently.
- Step 26 Cook it for 5 minutes until the flavors are absorbed well
- Step 27 Garnish with onions and coriander. Tasty roadside kaalan is ready!!!
