Dindigul style mutton biryani recipe | Mutton Briyani in Cooker preparation with step-by-step photos and a quick video. Dindigul is known for biryani and thalapakatti is a known brand all around the world. In Dindigul biryani, they use tiny-grained seeraga samba rice, and it’s one of the most expensive rice grown in southern Indian states. This rice type resemblance to cumin which is known as seeragam or jeera in the Tamil language. So this rice type got such a unique name. It is approximately a third the size of a grain of basmati rice and the aroma of the rice alone can make you go mouth-watering for sure. I had intentionally experimented with this biryani using a cooker so that biryani can be made in a quick time when you are running out of time. This biryani has a very distinct taste, fluffs up well when cooked. Before starting to cook, wash and soak the rice for at least half an hour. Hope you will enjoy this recipe.

Ingredients
- Shallots paste - ½ cup
- Green Chillies paste - 2 tbsp
- Ginger-Garlic paste – 3 tbsp
- Mutton - ½ Kg
- Water - 4 Cups
- Oil - 4 tbsp
- Ghee - 4 Tbsp
- Red chili powder - ½ tsp
- Coriander powder – ½ tsp
- Cumin powder (Jeera) -½ tsp
- Salt - to taste
- Lemon juice - 1 tsp
- Coriander leaves – ½ cup
- Mint leaves – ¼ cup loosely packed
- Seeraga Samba Rice - 2 Cups
- To Make Masala Powder:
- Bay leaf(tej patta)-1
- Cashew Nut - 10
- Cinnamon stick (Pattai/Dalchini) - 1 inches
- Cloves (Karampu/Lavang) - 5
- Star Anise (Anisipu/Chakkar phool) - 1
- Kapok Buds(marathi moggu) - 1
- Cardamom(Elachi)- 2
- Nutmeg(Jaiphal) - ¼ tsp
- Black Stone Flower(Kalpasi) - 1
- Mace - 1 tsp
- Fennel(Sombu/Saunf)- ½ tsp
Directions
- Step 1 Wash and soak the seeraga samba rice in water for 20 mins. Later, filter the rice and keep it aside.
- Step 2 Take a pressure cooker and add mutton
- Step 3 Add salt
- Step 4 Add water cook the mutton for about 10 whistles on medium flame and keep it aside
- Step 5 Take a mixer jar and add bay leaf
- Step 6 Add cinnamon sticks
- Step 7 Add cloves
- Step 8 Add star anise
- Step 9 Add kapok buds
- Step 10 Add black stone flower
- Step 11 Add mace
- Step 12 Add cardamom
- Step 13 Add nutmeg
- Step 14 Add cashew
- Step 15 Add fennel seeds and blend fine powder. Keep it aside
- Step 16 Take a pressure cooker and add oil
- Step 17 Add ghee
- Step 18 Add onion paste and saute it well
- Step 19 Add green chili paste
- Step 20 Add ginger garlic paste and saute it well
- Step 21 Add masala powder and saute it well
- Step 22 Add boiled mutton and saute it for few minutes
- Step 23 Add red chili powder
- Step 24 Add coriander powder.
- Step 25 Add jeera powder
- Step 26 Add salt to taste and saute it well
- Step 27 Add mint leaves
- Step 28 Add coriander leaves and saute it well
- Step 29 Add mutton boiled water and normal water and mix it well (1:2, 1 part rice to 2 parts water)
- Step 30 Add lemon juice and mix it well
- Step 31 Add the soaked rice and mix well
- Step 32 Finally add ghee and mix it well
- Step 33 Cover the lid and cook for 2 whistles.
- Step 34 Serve Seeraga Samba Mutton Biriyani with some raita.

17. Add onion paste and saute it well
18. Add green chili paste
19. Add ginger garlic paste and saute it well
20. Add masala powder and saute it well
21. Add boiled mutton and saute it for few minutes
22. Add red chili powder
23. Add coriander powder.
24. Add jeera powder
25. Add salt to taste and saute it well
26. Add mint leaves
27. add coriander leaves and saute it well
28. Add mutton boiled water and normal water and mix it well (1:2, 1 part rice to 2 parts water)
29. Add lemon juice and mix it well
30. Add the soaked rice and mix well
31. Finally add ghee and mix it well
32. Cover the lid and cook for 2 whistles
33. Serve Seeraga Samba Mutton Biriyani with some raita.
