Eggless Blueberry Muffins recipe | Eggless Blueberry Cupcake preparation with step by step photos and a quick video
Ingredients
- Dry Ingredients:
- Blueberries - ½ cup(i used dried blueberries)
- Maida (all Purpose Flour ) - 1½ cup
- Sugar - ½ cup / 100 grams
- Baking Soda / Cooking Soda- ½ tsp
- Baking Powder-1 tsp
- Salt- ½ tsp
- Sugar - ¾ cup
- Wet Ingredients:
- Oil-¼ cup
- Milk -1 cup
- Vanilla essence - 1 tsp
- White vinegar or apple cider vinegar -1 tbsp
Directions
- Step 1 Take a mixing bowl and add maida ( plain flour / all-purpose flour)
- Step 2 Add baking powder
- Step 3 add baking soda
- Step 4 Add salt and mix it well.Keep it aside
- Step 5 Take a bowl and add sugar
- Step 6 Add milk
- Step 7 Add oil
- Step 8 Add vinegar
- Step 9 Add vanilla essence and mix it well until sugar dissolve
- Step 10 Add the wet ingredients mixture to the dry ingredients and mix it well(In case if the batter becomes too thick, then you can add some more milk)
- Step 11 Add the blueberries.
- Step 12 Using a spatula, gently fold the blueberries in the batter.
- Step 13 Scoop the cake batter and pour it into cupcake liners to ¾(three forth) full. Don’t fill it completely to avoid overflow while baking.
- Step 14 Bake the cake at 180 °C degrees Celsius or 350 degrees Fahrenheit for 20 minutes.
- Step 15 Insert a toothpick at the center and see if it comes out clean. Else bake for 5 more minutes..
- Step 16 Now remove it from the tray and let it cool.
- Step 17 Enjoy the yummy and crunchy Eggless Blueberry muffins.
