I still remember having this cake in my school days. Hope most of the 90’s kids would still remember this cake. Honey/Jam cake is utterly fluffy & moist. Fruit jam and desiccated coconut bring a unique taste to this vanilla base cake. Though people call this honey cake honey is optional. I would suggest having this cake after 4 or 5hrs of preparation to get the real taste of it. If you want to add honey, just boil the water, sugar & honey and pour on the cake before applying the jam-coconut mixture.

Jam Coconut Cake | How to make bakery-style jam cake preparation with step by step photos
Ingredients
- All Purpose Flour / Maida – 1 cup / 120 grams
- Sugar – ½ cup / 100 grams
- Eggs – 2
- Milk – ½ cup
- Pure vanilla extract – 1 tsp
- Unsalted butter -½ cup (100 grams) softened to room temperature
- Baking Powder – 1 tsp
- Baking soda - ½ tsp
- Salt – ¼ tsp
- For Syrup:
- Jam - ½ cup
- Desiccated Coconut – ¼ cup
- Water – ¼ cup
- Sugar - ¼ cup
Directions
- Step 1 Preheat oven to 180°C. Take 7-inch square cake pans, line the bottoms of the pans with parchment paper, and set them aside.
- Step 2 Take a large mixing bowl and add softened butter
- Step 3 add sugar and mix it well using an electric mixer on medium speed for 4-5 minutes.
- Step 4 Add eggs one at a time, beating well after each addition to combine well.
- Step 5 Add vanilla extract and mix it well
- Step 6 Add flour
- Step 7 Add baking powder
- Step 8 add baking soda
- Step 9 Add salt and mix it well
- Step 10 Add milk and mix it gently.
- Step 11 Now pour the batter into the prepared baking pan then gently shake and tap the tin couple of times to spread the batter evenly.
- Step 12 Bake it in preheated oven for about 20 minutes.
- Step 13 Remove the cake pan from the heat and transfer the cake pan to a cooling rack. Allow cake to cool down completely.
- Step 14 Take a pan and add jam
- Step 15 Add sugar
- Step 16 Add water and mix it well and bring it to a boil.
- Step 17 Add coconut and mix it well.
- Step 18 Take a cake and top with a layer of jam coconut mixture, and smooth it out into an even layer.
- Step 19 Sprinkle desiccated coconut over the cake.
- Step 20 Now slice them squares and enjoy your jam cake
