During this covid19 lockdown, we were missing it very badly. After immense pressure from my son, I had decided to make donut & glaze at home. These doughnuts are quite easy to make, but I was not aware before trying it. Just follow the step by step instructions with perfect measurements to make a wonderful donut. I do not have a donut cutter but turned a small cup and bottle cap to make the donut shapes. You must try this!

Homemade Eggless Donut with the glaze - Make Fluffy Donuts preparation with step by step photos and a quick video.
Ingredients
- All Purpose Flour / Maida - 3 cups
- Warm Milk- 1 cup
- Sugar-½cup
- Butter - ¼ cup
- Dry yeast - 1½ tsp
- Baking soda - 1 tsp
- Baking powder - 1tsp
- Nutmeg(Jaiphal) - ½ tsp
- Cinnamon powder -¼ tsp
- Salt- ½ tsp
- Oil for deep frying
- Chocolate Donut Glaze:
- Icing Sugar / Confectioners Sugar - 1 cup
- Cocoa Powder - 3 tbsp
- Milk - 3 tbsp
- Vanilla Essence - ½ tsp
- Vanilla Donut Glaze:
- Icing Sugar / Confectioners Sugar - 1 cup
- Milk - 3 tbsp
- Vanilla Essence - ½ tsp
Directions
- Step 1 Take a bowl and add luke warm milk(If the milk is hot,it will kill the yeast and it won’t proof)
- Step 2 Add sugar and mix it well
- Step 3 Add dry yeast and mix it well. Set aside for 5 min or till it foams up.
- Step 4 Add flour
- Step 5 Add salt
- Step 6 Add baking powder
- Step 7 add baking soda
- Step 8 Add cinnamon powder
- Step 9 Add nutmeg powder
- Step 10 Add sugar
- Step 11 Add melted butter and knead well for 5 minutes
- Step 12 Tuck the dough and form to a ball. Place in a large mixing bowl.
- Step 13 Apply oil all over the bowl generously.
- Step 14 Cover it with a cling wrap and set aside in a warm place until it doubles in size( for about 1 hour).
- Step 15 When it doubles, knock out the air and knead the dough for 5 mins
- Step 16 In a clean countertop, sprinkle flour and spread out the dough to thick sheet.
- Step 17 Using a lid or round cookie cutter, cut out into circles. Use a smaller lid/ cookie cutter to punch the hole inside the disc.
- Step 18 Work on the remaining dough and repeat to finish the dough using the same process.
- Step 19 Heat enough oil in a flat bottomed pan and once the oil is hot, drop the doughnuts carefully into the oil. Few per batch depending on the size of the pan.
- Step 20 Cook both sides until golden in color.
- Step 21 Drain over paper towel. Repeat to finish. Fry the cut out the center part of the dough too and enjoy as doughnut holes.
- Step 22 Making of chocolate glaze
- Step 23 Take a bowl and add milk
- Step 24 Add powdered sugar
- Step 25 Add cocoa powder
- Step 26 add vanilla extract and whisk until silky and smooth. (Store the icing at room temperature in an airtight container for 2 weeks)
- Step 27 Dip doughnuts in chocolate glaze and let rest to harden slightly.
- Step 28 Making of vanilla glaze
- Step 29 Take a bowl and add milk
- Step 30 Add powdered sugar
- Step 31 add vanilla extract and whisk until silky and smooth. (Store the icing at room temperature in an airtight container for 2 weeks)
- Step 32 Dip doughnuts in the vanilla glaze and let rest to harden slightly.

Note:
- I personally like both vanilla glaze and chocolate together. First, dip in the vanilla glaze and wait for a few mins before dipping it in chocolate glaze.
- This eggless doughnut keeps good for a couple of days at room temperature. 1 week in the fridge. I prefer to have it warm

Yes, you can …preheated oven at 180 degrees celsius for 15 minutes.

I was also wondering if I could substitute milk for water, or would it make too much of a difference? The reason I’m asking, is that I don’t like to use milk in things as I’m afraid of the treats spoiling if I leave them out at room temperature. If the milk is not replaceable, that is fine, I will just store them in the fridge.
